RASPBERRY AND WHITE CHOCOLATE COOKIES

For this simple recipe I used my standard cookie recipe and added chunks of white chocolate and raspberries. You can adjust the quantities according to taste, or substitute the raspberries for blueberries or any other fruit. To make 20 cookies you'll need:
225g softened butter
150g caster sugar
250g plain flour
1 large egg
120g white chocolate broken into small pieces
100g whole raspberries

First you want to beat together the sugar and the butter until light and fluffy, then beat in the egg. Fold in the flour and at this point use a spoon instead of a whisk to mix the dough together as it can be quite sticky. Fold in the chocolate and the raspberries - I like to leave them whole as they break when mixing, but you could always chop them smaller or use frozen or dried raspberries. Now just use the spoon to evenly dollop the mixture onto a lined baking tray, and bake at 180 for 15-18 minutes. Leave to cool on a wire rack, or if you're a student like me, an upturned pizza tray!   3. They look amazing! I love raspberry and white chocolate cookies...I used to always buy the ones from Sainsbury's until I had to go gluten free...I'll have to play around and see if I can make a gluten free version :)

  4. Oh Nisha you've made me so hungry! I get a new oven next week so I may just have to make these- white chocolate and raspberry is a favourite of mine, before my oven broke last year I made Blondies with raspberries in but cookies could definitely be yum! Plus they look gooey, and gooey cookies are the best!
